About Our Blog

No filters. Just the real journey.
Culinary leadership, kitchen management, culinary skills, kitchen culture.

GO Cook RVA CL3 students with CCAB TeamLet’s be honest: real growth isn’t picture-perfect, and building true culinary leadership in a modern kitchen right now is incredibly tough. Running a hospitality business right now is incredibly tough, and managing rising food costs while chasing reliable talent can feel like a losing battle. That’s why in our blog we’re opening up our “black box” and stripping away the polished narratives. I want you to see the true, vulnerable journeys it actually takes to build lasting leadership and eliminate the “Chaos Tax.”

Here, you’re going to get an inside look at what it takes to run a modern kitchen, implement efficient kitchen systems, and shape a thriving workplace culture. You’ll discover the unvarnished, real stories of our students’ transformations, see exactly how they apply life-changing skills, and go behind the scenes with the mentors, chefs, and partners who make this mission happen.

Whether you’re a business owner trying to maintain margins or an aspiring chef stepping up to the line, we’re showing you how sustainable, community-minded practices build “Mise-en-Place Ready™” professionals from the ground up.

One Small Step Led to the Beginning of Clint’s Culinary Career: A GO Cook Success Story

When Clint joined the Go Cook Program, he was on probation, unsure of his future, and carrying the weight of past mistakes—but he showed up with determination, embracing every kitchen station, asking for help when he struggled, and never giving up until he perfected his parmesan-crostini. By week seven, his confidence had soared, he was leading teammates and inspiring everyone around him. Then came the moment that changed everything: his probation officer attended graduation, witnessed Clint’s transformation, and successfully recommended his probation be terminated. Soon after, Clint landed a full-time line cook position with Delaware North, launching a promising culinary career. Clint’s story proves that transformation doesn’t require a perfect past—just one step forward and a community willing to walk with you. The Go Cook Program is that community, and your next chapter is waiting.

Partner Spotlight: AJ Sam & the Heart of Transformation

In this Partner Spotlight, Culinary Concepts AB sits down with AJ Sam—Richmond Public Schools partner and founder of RECS—to talk about what real transformation looks like for justice-involved youth. AJ shares the personal stories behind the program’s success, from a student caring for disabled parents to another coming off probation after a judge witnessed his progress firsthand. Together, they explore how “bookending” culinary training with five hours of weekly mentorship, advocacy, and life-skills support helps students build not just careers, but a lasting foundation for their whole lives.

It Takes a Tribe to Empower Student Success

At Culinary Concepts AB, transformation happens through more than curriculum—it happens through community. This month, we spotlight our historic GO Cook cohort at the Kitchens at Reynolds Community College, where “Serving Up Success,” Virginia’s first pre-apprenticeship program for justice-impacted youth, came to life through the dedication of partners like AJ Sam of Richmond Educational Community Services. Discover how a village of mentors, funders, and educators is helping young people rewrite their futures, one plate—and one relationship—at a time.
