Lettuce Wrap

Grilled Zucchini, Shaved Apples, Goat Cheese, Lemon Thyme Vinaigrette

Ingredients

Scale

1 ea head of bibb lettuce 

12 tbsp Goat cheese (crumbled) 

1 ea lemon zest

1 tbsp lemon juice

1 sprig thyme 

½ cup extra virgin olive oil 

1 ea zucchini (cut in half) 

1 ea Avocado (sliced) optional 

Salt and pepper to taste

Instructions

Phase 1

  • using a zester, zest lemon directly into a medium-size bowl. Cut the lemon in half and squeeze about ½ cup of juice from the lemon. 
  • pulling backward, remove the thyme leaves from the steam. Ruff chop and add to zest. 
  • add olive oil, salt, and pepper. Using a whisk, mix well.  
  • TASTE!
  • adjust seasoning as needed.
  • reserve 

 

Phase 2 

  • preheat griddle or grill to 400-425
  • using a mandolin, shave the zucchini into ¼ in thick planks. take half of the cut zucchini and reserve. Season the other half with salt and pepper
  • place seasoned zucchini on the grill and allow it to cook for about 5-7 minutes, then rotate 90 degrees. flip over and repeat the process
  • once you have achieved grill marks on both sides, remove and allow to rest for about 3 minutes 
  • While the grilled zucchini is cooling, cut the reserved portion into ¼ stipes and place in lemon dressing
  • take the grilled zucchini and repeat the process
  • toss well and reserve 

 

Phase 3

  • wash lettuce under cold water and shake dry to the best of your ability
  • remove the cord from the bottom and pull leaves away. reserve leaves 
  • using your knife cut the apple in half and remove the core
  • slice apple into 1/4 in thick slices 
  • cut the avocado in half and repeat the processes 

Phase 4

  • place two leaves of lettuce down
  • add avocado and apple slice
  • add zucchini 
  • top with goat cheese 
  • finish with a drizzle of the lemon dressing
