Ami Shimanek

Expert-Led Culinary Training Programs in Virginia

Director of Operations | Culture & Performance Specialist

Ami Shimanek is a culinary architect and operational strategist who lives at the intersection of technical excellence and human development. As the Director of Operations and Culture & Performance Specialist for Culinary Concepts AB (CCAB), Ami serves as the vital engine that transforms high-level workforce strategy into daily, “on-the-line” reality.

A Foundation of Dual Expertise Ami’s unique leadership style is rooted in a rare combination of creative artistry and business precision. Holding both an Associate’s degree in Culinary Arts and a Bachelor’s degree in Business Management, she possesses the “dual language” necessary to bridge the gap between the heat of a professional kitchen and the meticulous demands of corporate operations. With over two decades of diverse experience—ranging from the fast-paced environments of high-end restaurants and resorts to the structured complexities of private clubs, educational institutions, and healthcare settings—Ami brings a panoramic perspective to every project she touches.

Operationalizing Culture at CCAB At Culinary Concepts AB, Ami is far more than an administrator; she is a specialist in the science of readiness. She is the operational force behind CCAB’s most successful workforce initiatives, focusing on the practical application of workplace culture and team dynamics.

Ami is the primary architect and facilitator of immersive workshops that tackle the industry’s most pressing “soft skill” challenges. From teaching the nuances of interpersonal communication to defining the critical distinction between managing and leading, her curriculum is designed to build resilient professionals. She pioneered the CCAB model of “supportive accountability,” a framework that challenges students to meet high professional standards while providing the scaffolding and emotional intelligence training necessary for them to succeed.

Value to the Community and the Industry Ami’s impact on the Virginia hospitality landscape was formally recognized when she was named a 2025 Ordinary Award Finalist for her outstanding leadership. Her true value to the community lies in her ability to create a “seamless bridge” between untapped talent and regional labor market demands. By aligning student development with the actual expectations of modern employers, she ensures that CCAB graduates don’t just find jobs—they build sustainable careers that stabilize the local economy.

A New Chapter in Virginia Originally from Wisconsin, Ami recently relocated to the Charlottesville area to be closer to family, bringing her trademark enthusiasm and “can-do” spirit to the local community. Outside of her professional pursuits, Ami is an avid reader and a lifelong student of the culinary arts, often found experimenting with new recipes in her own kitchen. She is an enthusiast of the Great Outdoors and enjoys exploring the stunning natural landscapes of her new home in Virginia alongside her 18-year-old son, Gregory, and their loyal dog, Arthur.

Through her work at CCAB, Ami Shimanek continues to prove that when you invest in people and refine operations, the results are not just better meals, but stronger communities.
