Grits have always been a staple food in soul food cuisine. What are grits? Grits are typically made from dent corn which is mildly sweet corn that is then treated with lime, and then coarsely ground to become hominy grits.
During slavery, corn was a huge commodity, and slaves were given rations, mostly because it was cheap. Over time, they found many different ways to utilize almost every part of the corn, creating techniques and dishes that have evolved food as we know it today. One of those dishes that is still popular to this day is Shrimp and Grits. To help you on your culinary journey, check out the video below of one of our classes and re-create the dish yourself!
What’s Happening
First Class of 2022
This past week we kicked off our first cohort of 2022. As always, week one is full of many highs and lows, but most importantly, so much growth! This week we talked about self-perception, took a deep dive into the world of hospitality, and tacked BEO (Banquet Event Order) literacy. We are very proud of this group for making it through their first week’s practicals. This is a great group, and we’re excited to introduce them into the workforce.
